Is Your Oven Temperature Accurate? Testing and Calibration Guide

If your baked goods are consistently over or underdone, your oven temperature may be inaccurate. Even premium ovens from Wolf, Thermador, and Miele can drift over time.

Signs of Temperature Problems

Your Oven Runs Hot

  • Cookies burn on bottom
  • Tops brown too fast
  • Roasts finish early
  • You always have to reduce temp
  • Your Oven Runs Cold

  • Baking takes longer than recipes
  • Bread doesn't rise properly
  • Casseroles stay cold in middle
  • Preheating takes forever
  • Temperature Fluctuates

  • Inconsistent results batch to batch
  • Hot spots in the oven
  • Convection doesn't help
  • Self-clean cycle changed behavior
  • How to Test Your Oven

    Method 1: Oven Thermometer

    The most reliable test:

  • Place thermometer in center of oven
  • Preheat to 350°F
  • Wait 20 minutes after preheat signal
  • Check reading every 10 minutes
  • Average several readings
  • Method 2: Sugar Test

    Sugar melts at exactly 367°F:

  • Place 2 tbsp sugar on oven-safe dish
  • Set oven to 350°F
  • Check after 15 minutes - should NOT melt
  • Increase to 375°F
  • Sugar should melt within 15 minutes
  • Method 3: Bread Test

    Use sliced white bread:

  • Preheat to 350°F for 20+ minutes
  • Place bread slices across entire rack
  • Toast for 5 minutes
  • Even browning = even heat
  • Patterns reveal hot spots
  • What's Normal?

Most ovens are allowed to be ±25°F:

  • ±5°F: Excellent calibration
  • ±15°F: Acceptable
  • ±25°F: Within spec but adjust recipes
  • >25°F: Needs calibration or repair
  • DIY Calibration

Many premium ovens allow user calibration:

    Wolf Ovens

  • Press and hold Bake for 5 seconds
  • Use +/- buttons to adjust
  • Can adjust ±35°F
  • Press Start to save
  • Thermador Ovens

  • Press Settings
  • Select Calibrate
  • Adjust as needed
  • Confirm selection
  • Miele Ovens

  • Requires technician mode for most models
  • User calibration limited
  • Call for professional service
  • *Note: Consult your manual for exact procedures*
